Dry elbow pasta (180 g; for 2 servings)

Botenz Cashew Powder (45 g; ≈7 Tbsp; defatted)

Unsweetened plant milk (420 ml; 1¾ cups total)

Nutritional yeast (2 Tbsp; cheesy flavor)

Yellow mustard (1 tsp; mild bite)

Tomato paste (1 tsp; color + depth)

Garlic powder (½ tsp; rounded savoriness)

Smoked paprika (opt.; ¼ tsp; gentle warmth)

Turmeric + black pepper (pinch each; color/balance)

Fine sea salt (¾ tsp or to taste)

Lemon juice (finish; 1 tsp; off heat)

(1) Boil pasta.

Cook elbows in salted water; reserve ½ cup pasta water, drain.

(2) Bloom the powder.

Whisk Botenz Cashew Powder with ½ cup cold milk to a smooth slurry.

(3) Warm the base.

In a pan over medium heat, add the rest of the milk.

Whisk in slurry, nutritional yeast, mustard, tomato, garlic, paprika, turmeric, pepper, salt. Cook 2–4 min to silky.

(5) Combine.

Add pasta; splash pasta water as needed for glossy coat.

(6) Finish & serve.

Off heat, stir in lemon juice. Taste salt. Serve hot.
